Why it works: Egg and bread are a kitchen classic. They rank in the top 13% of all ingredient pairs, and cooks put them together in 22,662 recipes. Both carry (e)-2-octenal, which smells fatty, green. The science ↓

Poached Eggs

Ingredients

Directions

Prepare

  1. Choose eggs that are at least two days old but still fresh.

  2. Strain boiling water through a clean cloth into a saucepan.

  3. Break the eggs into a cup or saucer.

Poach the eggs

  1. When the water boils, remove the pan from heat.

  2. Gently slip the eggs into the pan.

  3. Once the egg whites are set, return the pan to moderate heat.

  4. Wait until the water boils again.

  5. Remove the eggs with a slotted spoon and trim the ragged edges.

Prepare the toast

  1. Cut the bread into pieces slightly larger than the eggs and about ¼ inch thick.

  2. Toast the bread on one side until it is lightly colored.

  3. Moisten the toast with hot water.

  4. Sprinkle the toast with vinegar, lemon juice, or anchovy essence.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites set around the yolk during gentle poaching, giving the egg its shape and texture.
Boiling water
Heat source that cooks the eggs; straining it through cloth removes debris for cleaner-looking eggs.
Bread
Serves as the base for the poached eggs; toasting adds color and a crisp, browned flavor.
Vinegar, lemon juice, or essence of anchovy sauce
Adds acidity or savory flavor to the toast, brightening the richness of the egg.

The step that matters

Gently slip the eggs into the pan. Eggs held just below a boil keep their whites compact. Vigorous boiling or dropping eggs in can scatter whites and break yolks, so the eggs stay intact and tidy.
