Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Sift flour and salt together.

  2. Add half of the milk and beat until smooth.

  3. Add the remaining milk, well-beaten eggs, and melted butter, and beat for about 5 minutes.

  4. Pour the dough into greased muffin pans.

Bake

  1. Bake in a preheated oven at 400°F (200°C) for the first 8 to 10 minutes, then decrease the heat to 300°F (150°C) and bake for an additional 25 to 35 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the risen walls of the popover together.
Eggs
Set during baking to give the popovers their hollow structure and rise.
Sweet milk
Adds moisture to the batter and helps create steam for lift.
Melted butter
Adds fat for richness and a tender crumb.

The step that matters

Keep the oven closed during the first bake. Opening the door early lets steam and heat escape before the batter sets, so the popovers can collapse instead of rising tall and hollow.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
