Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Mix the almond meal and sugar together.

  2. Beat the egg whites until light.

  3. Add cream of tartar and continue beating until very stiff.

  4. Combine the almond mixture with the egg whites and add almond extract.

  5. Pour into a tube cake pan, which may be sparingly greased.

Bake and serve

  1. Bake in a slow oven at 300°F (150°C).

  2. Serve with sweetened whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almond meal
Provides the body and nutty flavor that form the torte's base.
Egg whites
Whipped into foam, they give the torte its light, airy structure as it sets.
Sugar
Sweetens the torte and helps stabilize the whipped egg whites.
Cream of tartar
Acidifies the egg whites, helping them whip to a stiffer, more stable foam.

The step that matters

Add cream of tartar and continue beating until very stiff.. Egg whites must be beaten to stiff peaks to trap air. Under-whipped whites collapse during baking, leaving a dense torte.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, cream):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits less well
  4. Pecansfits less well

Fit is the average pairing score against sugar, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
