Ideal Caramel Icing

Ingredients

Directions

Cook the base

  1. In a saucepan, combine brown sugar, milk, water, and butter.

  2. Set over medium heat and boil slowly, stirring constantly until it begins to boil.

  3. Boil for 10 to 12 minutes, stirring occasionally.

  4. To test, drop a small amount into cold water; it should form a soft, firm ball.

  5. Add marshmallows and continue to cook and stir until dissolved.

Finish and beat

  1. Remove from heat and stir in salt and vanilla.

  2. Cool to lukewarm before beating.

  3. Beat for 15 to 20 minutes until smooth; if it sets too quickly, reheat gently or add a little cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Medium brown sugar
Provides sweetness, moisture, and the characteristic caramel flavor of the icing.
Sweet milk
Adds moisture and creaminess, softening the sugar mixture into a smooth icing.
Butter
Adds fat for richness and a smoother, more tender texture.
Marshmallows
Dissolve into the mixture, adding sweetness and helping the icing stay soft and smooth.
Vanilla
Adds aroma that rounds out the caramel flavor.

The step that matters

Cook to the soft-ball stage. Sugar syrup must reach the right concentration to set properly. Stopping early leaves the icing runny and slow to firm, while cooking too long makes it hard and grainy once beaten. The cold-water test shows when the syrup is ready.
