Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓
Tapioca Pudding
Ingredients
Directions
Prepare the tapioca
Soak the tapioca in 1¼ cups of water for at least 2 hours until soft.
Pour cold water over the soaked tapioca, wash gently, and drain.
Make the pudding
Beat the egg yolks until light, then mix with the sweet milk, sugar, and salt.
Place the mixture in a double boiler and heat to boiling.
Stir in the tapioca and cook in the double boiler for about 30 minutes, stirring frequently.
Remove from heat and add vanilla.
Beat the egg whites until stiff and fold them into the mixture carefully.
Pour into individual molds and set aside to cool.
Serve
Once cold and set, remove from molds and place on individual dishes.
Slice bananas and arrange them in a circle around the molds.
Serve with rich cream or fruit juice boiled down to a thick syrup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Tapioca
- Swells during soaking and cooking to give the pudding its thick, chewy body as it sets.
- Eggs
- Yolks enrich and thicken the custard, while whipped whites add lightness and help the pudding set.
- Sweet milk
- Forms the liquid base that the tapioca cooks in, adding richness and creaminess.
- Sugar
- Sweetens the pudding and helps balance the flavor of the milk and eggs.
The step that matters
Folding in the egg whites. Whites beaten until stiff hold air that lightens the pudding. Folding gently keeps that air in, while stirring hard would deflate it and make the texture dense.
