Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Sage Pork Loaf

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the loaf

  1. Mix the pork, beaten eggs, water, and bread crumbs together.

  2. In a separate bowl, mix the sage, salt, and pepper, then add to the pork mixture, stirring well.

  3. Mold the mixture into a loaf and place it in a greased pan.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C) until cooked through, allowing it to brown at the end.

  2. Leave space between the loaf and the sides of the pan to add a little water for basting if necessary.

  3. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean pork
Provides the main body and protein structure of the loaf.
Eggs
Bind the mixture and help it hold its shape as it sets.
Bread crumbs
Absorb liquid and add softness, helping keep the loaf moist.
Water
Adds moisture so the loaf stays juicy during baking.
Ground sage
Adds the dominant herbal aroma and flavor to the pork.

The step that matters

Leave space for basting water. Pork loaf dries out easily in the oven. Adding water around the loaf as needed creates steam and moisture, while the final browning needs dry heat, so the timing matters.

Swap the sage

How well each one fits the dish's main ingredients (pork, egg, bread, pepper):

  1. Parsleyfits about as well
  2. Marjoramfits about as well
  3. Sagethe original
  4. Nutmegfits about as well

Fit is the average pairing score against pork, egg, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
