Liver Loaf

Ingredients

Directions

Prepare the filling

  1. Wash the liver and place it in a pot with the salt pork and the whole peeled onion.

  2. Cover with enough water to keep simmering slowly, boiling down to about ½ cup of liquid.

  3. Remove the liver, salt pork, and onion, and run them through a food chopper.

  4. Return the chopped mixture to the ½ cup of liquid.

  5. Dice 2 hard‑boiled eggs and add them to the mixture.

  6. Beat the remaining 2 eggs lightly and add them along with the cracker crumbs, salt, and pepper.

Bake and serve

  1. Mold the mixture into a loaf and place it in a greased pan, pressing additional cracker crumbs on the outside.

  2. Bake in the oven, adding a few tablespoons of hot water occasionally while baking.

  3. Ensure there is space between the loaf and the pan to prevent burning.

  4. Slice and serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf’s liver
Provides the main body and rich flavour of the loaf.
Eggs
Bind the mixture and help it set firm when baked.
Cracker crumbs
Absorb liquid and add body so the loaf holds its shape.
Salt pork
Adds fat and moisture, keeping the loaf from drying out.

The step that matters

Ensuring space between the loaf and the pan. If the loaf sits tightly against the pan, the edges can scorch and dry out during baking. A little space, along with occasional hot water, helps the loaf cook gently and stay moist.

Swap the onion

How well each one fits the dish's main ingredients (liver, pork, egg, pepper):

  1. Capsicumfits better
  2. Potatofits better
