Rice Salmon Loaf

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Generously butter a baking dish or pan and line it with some of the cooked rice, reserving some for the top.

  3. In a bowl, mix together the salmon, bread crumbs, salt, beaten eggs, green pepper, white pepper, and cayenne pepper.

Bake and serve

  1. Place the mixture in the lined baking pan and cover with the remaining rice.

  2. Bake for about 45 minutes.

  3. Remove from the oven and let it cool in the pan.

  4. Once cooled, remove from the pan and place on a platter, garnished with slices of hard‑cooked eggs and lemon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the salmon mixture and set firm as it bakes, giving the loaf structure.
Bread crumbs
Absorb moisture from the salmon and eggs, helping the loaf hold together.
Cooked rice
Forms the bulk of the loaf, adding body and a soft, tender texture.
Salmon
Provides the main flavour and protein, flaking into the loaf as it sets.

The step that matters

Letting the loaf cool in the pan. Cooling before unmoulding lets the egg proteins finish setting and the starches firm up, so the loaf holds its shape when removed and sliced.

Swap the white pepper

How well each one fits the dish's main ingredients (rice, salmon, bread, egg, pepper, butter):
