Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Binds the mixture and helps it set firm when cooked gently.
Gelatin
Sets the liquid mixture so the loaf holds its shape when chilled.
Red salmon
Provides the main flesh and flavour of the loaf.
Flour
Thickens the liquid base as it cooks.
Green pepper
Adds crisp texture and fresh, mildly bitter flavour.

The step that matters

Dissolve the gelatin fully before adding it to the hot mixture. Undissolved gelatin leaves grainy specks and uneven setting. Adding it to a hot base, then cooling before the salmon goes in, keeps the gel even and stops the chopped pepper and fish from sinking or breaking up unevenly.

Swap the white pepper

How well each one fits the dish's main ingredients (flour, mustard, pepper, egg, lemon, salmon, gelatin):

  1. Capersfits better
  2. Tarragonfits better
  3. Dillfits better
  4. White pepperthe original

Fit is the average pairing score against flour, mustard, pepper, egg, lemon, salmon, gelatin. Candidates are from the same food group and used in at least 100 recipes.
