Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh mushrooms
Form the main body of the sauce and release moisture as they simmer.
Flour
Thickens the milk into a smooth white sauce that clings to the vegetables.
Sweet milk
Forms the liquid base of the white sauce, giving it a creamy body.
Butter
Adds fat and richness, helping the mushrooms brown and carrying flavor.
Green pepper
Adds mild, fresh vegetable flavor and a little texture to the sauce.

The step that matters

Mix the flour with milk gradually. Adding flour to liquid all at once creates lumps that are hard to smooth out. Blending in small amounts of milk first keeps the starch dispersed so the sauce turns out smooth.

Swap the white pepper

How well each one fits the dish's main ingredients (mushroom, flour, pepper, butter, milk):

  1. Thymefits better
  2. Nutmegfits better
  3. Parsleyfits better
  4. White pepperthe original

Fit is the average pairing score against mushroom, flour, pepper, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
