What each ingredient does

Cauliflower
Forms the base of the salad, providing the main structure and a tender bite once cooked.
Mayonnaise dressing
Adds fat and creaminess, giving moisture and a rich coating to the vegetables.
Cucumbers
Contribute moisture and crisp texture to the chopped filling.
Spanish onion
Adds sharp, pungent flavor to the chopped filling.

The step that matters

Removing the branches whole after cooking. Cauliflower that is overcooked becomes soft and falls apart, so the branches tear and cannot hold their shape. Cooking until just tender and cooling promptly in cold water helps the florets stay intact and firm.
