Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of mutton
Gives the broth its meaty flavor and body as it simmers.
Pearl barley
Releases starch as it simmers, lightly thickening the broth.
Onion
Adds savory, aromatic sweetness to the broth.

The step that matters

Removing the scum after the first boil. Scum is coagulated protein and impurities that rise as the liquid heats. Skimming it early keeps the broth clearer and cleaner-tasting.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mutton, parsley, barley):

  1. Leekfits better
  2. Carrotfits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against mutton, parsley, barley. Candidates are from the same food group and used in at least 100 recipes.
