Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Boil the cod in vinegar and water with sugar, mustard, salt, and pepper until cooked.

  2. Let the fish cool, then pick it into fine pieces.

Mix and bake

  1. Mix in bread crumbs, butter, cream, and enough milk to keep it moist.

  2. Transfer to shells or a baking dish, cover with more bread crumbs, and dot with butter.

  3. Bake at 400°F (200°C) for 10 to 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cod
Forms the main body of the dish, providing flaky protein that holds the filling together.
Bread crumbs
Absorb liquid and add body, giving the filling structure and a crisp golden topping.
Butter
Adds richness and moisture, and browns on top for flavor and color.
Cream
Adds moisture and richness, keeping the mixture soft and tender when baked.
Vinegar
Adds acidity that brightens the flavor of the poached fish.

The step that matters

Pick the cod into fine pieces after it cools. Fish that is still hot can fall apart unevenly, and large chunks stay dry. Cooling and finely flaking the cod gives an even texture that absorbs the cream and milk evenly.

Swap the mustard

How well each one fits the dish's main ingredients (vinegar, sugar, pepper, bread, butter, cream, milk):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Mustardthe original
  4. Asparagusfits about as well
