Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Chop the uncooked veal and pickled pork very fine.

  2. In a bowl, combine the chopped meats with the egg, rolled crackers, salt, sage, and pepper.

  3. Shape the mixture into a loaf.

Bake

  1. Place the loaf in a baking pan, butter the top, and add ¼ inch of water to the pan.

  2. Bake in a slow oven at 300°F (150°C) for one hour, basting occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the bulk of the loaf and gives it its main meaty texture.
Pickled pork
Adds fat and savory flavor, keeping the loaf moist as it cooks.
Egg
Binds the chopped meats so the loaf holds its shape when sliced.
Crackers
Absorb juices and add body, helping the loaf stay tender and bound.

The step that matters

Shape the loaf firmly and evenly. The mixture is held together only by the egg and crackers. Loose or uneven shaping can let it crumble or cook unevenly, so a compact, even loaf bakes more consistently.

Swap the sage

How well each one fits the dish's main ingredients (veal, pork, egg, pepper, butter):

  1. Parsleyfits about as well
  2. Sagethe original
  3. Thymefits less well
  4. Nutmegfits less well

Fit is the average pairing score against veal, pork, egg, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
