What each ingredient does

Cooked chicken
Provides the main bulk and savory flavor of the croquettes.
Flour
Thickens the butter and milk into a cream sauce that binds the filling.
Butter
Adds fat and richness to the cream sauce and its flavor.
Milk
Forms the liquid base of the cream sauce, giving it a smooth, creamy body.
Egg yolks
Add richness and help the hot filling set firm and hold its shape.
Eggs
Form the egg wash that helps bread crumbs stick to the outside.

The step that matters

Make the cream sauce smooth before adding the chicken. Stirring the milk in gradually keeps the flour evenly dispersed, so the sauce thickens without lumps. A smooth, thick sauce binds the filling so the croquettes hold their shape when rolled and fried.

Swap the onion

How well each one fits the dish's main ingredients (chicken, pepper, lemon, celery, parsley, egg, cream):
