Why it works: Thyme and marjoram match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓

Ingredients
Directions
Melt the butter in a saucepan over medium heat.
Peel and slice the onion, then add it to the melted butter.
Stir in the flour and fry for 1-2 minutes until browned.
Open the tin of Australian mutton and remove the fat from the meat.
Take 1½ pounds of mutton from the tin.
If using all the meat, rinse the tin with ½ pint of warm water to make gravy.
Pour the gravy into the saucepan with the flour and butter, stirring until it boils and thickens.
Move the saucepan to the side of the heat to keep warm.
Wash and dry the parsley, thyme, and marjoram, then remove the stalks.
