Bubble and Squeak

Ingredients

Directions

Prepare the cabbage

  1. Wash the cabbage well in salt and water.

  2. Boil a saucepan of water, add salt and soda.

  3. Add the cabbage to the boiling water and cook for about 20 minutes until tender.

  4. Drain the cabbage and place it on a plate.

Fry the meat

  1. Slice cold salt beef and fat, and place in a frying pan.

  2. Fry the meat over medium heat until light brown, turning occasionally.

  3. Arrange the meat in the center of a hot dish, cover, and keep warm in the oven.

Fry and serve

  1. Chop the boiled cabbage into small pieces and fry in the same pan for a few minutes, stirring to prevent burning.

  2. For serving, place the fried cabbage and any warmed carrots or parsnips around the dish, with the meat in the center.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Bulk of the dish; boiling softens it and frying gives it browned, toasty edges.
Salt beef or pork
Provides savory flavour and fat, which helps the cabbage brown in the pan.
Common soda
Added to the boiling water, it can soften the cabbage fibres and help it turn tender.

The step that matters

Frying the chopped cabbage. Stirring keeps the cabbage moving so it browns in patches without scorching. Too little attention can burn the pieces on the pan surface before the rest is golden.

Flavor stand-ins for the carrot

The recipe marks carrot as optional. How well each one fits the dish's main ingredients (beef, cabbage):

  3. Turnipbetter flavor fit
  4. Carrotthe original

Fit is the average pairing score against beef, cabbage. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
