Ingredients

Directions

Prepare the vegetables

  1. Clean and peel the mushrooms, cutting off the ends of the stalks.

  2. Wash, scrape, and slice the carrot.

  3. Wash, peel, and slice the onion and shallot.

Make the sauce

  1. Melt the butter in a saucepan over medium heat.

  2. Add the vegetables and fry until browned, then stir in the flour to form a smooth paste.

  3. Pour in the brown stock and stir until the sauce boils and thickens.

  4. Reduce heat and let the sauce simmer gently for 10 minutes.

  5. Skim off any butter that rises to the top.

  6. Season with salt and pepper to taste. If needed, add a teaspoon of caramel for color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the stock into a smooth sauce as it cooks with the butter.
Butter
Carries the frying of the vegetables and adds richness to the sauce.
Brown stock
Forms the liquid base that gives the sauce its body and savory flavor.
Mushrooms
Add earthy savory flavor as they brown in the butter.
Onion
Adds savory sweetness and aroma as it browns with the vegetables.

The step that matters

Stirring the flour into the browned vegetables. The flour must cook in the hot fat to form a smooth paste. Adding stock too early, or leaving lumps, makes the sauce grainy. Stirring the liquid in gradually keeps it smooth as it thickens.

Fit is the average pairing score against butter, flour, mushroom, carrot, shallot, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
