Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and flavour, and enriches the sauce when stirred in before serving.
Flour
Thickens the melted butter into a smooth base as it cooks with the water.
Cold water
Forms the liquid body of the sauce, which thickens as it comes to the boil.

The step that matters

Stirring in the flour and water. Stir the flour into the melted butter until smooth before adding the water, so lumps do not form. Adding cold water to a hot roux and stirring until it boils lets the starch swell evenly and thicken the sauce.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (butter, flour, anchovy, sauce, fish, pepper, sugar):

  1. Capersfits better
  2. Parsleythe original
  3. Nutmegfits about as well
  4. Tarragonfits about as well
