Why it works: Barley and parsley match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 630 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Mutton Broth
Ingredients
Directions
Make the broth
Wash the mutton well until clean.
Place the meat in a large saucepan with 3 pints of cold water and bring to a boil.
Wash the pearl barley or rice in cold water.
Once boiling, add the pearl barley or rice and salt to help the scum rise.
Reduce heat and let it simmer gently for 2.5 hours, skimming occasionally.
Make the sauce
If the meat is needed immediately, prepare the sauce.
Chop the parsley finely after washing and drying it.
Melt the butter in a saucepan over heat.
Stir in the flour smoothly once the butter is melted.
Add ½ cup of broth from the mutton to the butter and flour, stirring until it boils and thickens.
Mix in the chopped parsley and keep the sauce warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mutton
- Provides the meat and rich flavour that make up the broth.
- Pearl barley or rice
- Adds body and thickens the broth as it cooks.
- Butter
- Forms the fat base of the sauce and carries its flavour.
- Flour
- Thickens the butter into a smooth sauce when cooked with the broth.
The step that matters
Stirring the flour into the butter and broth. Adding flour to melted butter and whisking in the broth gradually keeps the sauce smooth. Stirring until it boils lets the starch swell fully and thicken the sauce, while adding liquid too fast can leave lumps.
Swap the parsley
How well each one fits the dish's main ingredients (mutton, barley, butter, flour):
- Capersfits better
- Nutmegfits about as well
- Turmericfits about as well
- Parsleythe original
Fit is the average pairing score against mutton, barley, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
