Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Beef Loaf
Ingredients
Directions
The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.
Prepare
Chop the beef and ham very fine.
Add salt, pepper, cracker crumbs, beaten eggs, and cream. Mix thoroughly.
Grease a bread pan and press the mixture firmly into it.
Trim each end of the hard-boiled eggs to create a flat surface, then place them on top of the mixture in a row.
Pack the remaining meat mixture over the eggs, pressing down well.
Bake and serve
Cover and bake in a moderate oven (350 °F / 175 °C) for over one hour.
Uncover and bake for an additional 30 minutes.
Serve hot or cold.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lean beef
- Forms the bulk of the loaf and gives it a meaty, sliceable body.
- Raw ham
- Adds savory, salty flavor and fat that keeps the loaf moist.
- Eggs
- Bind the meat and set on baking, holding the loaf together when sliced.
- Soda crackers
- Absorb moisture and add binding crumbs that keep the loaf tender.
- Cream
- Adds moisture and richness, keeping the meat from drying out as it bakes.
The step that matters
Pressing the mixture into the pan. Firm packing removes air pockets so the loaf holds together when sliced. Loose packing can leave gaps and crumbling.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
