Veal Loaf

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Chop the veal and pork very fine.

  2. Add the salt, pepper, cracker crumbs, beaten eggs, cream, and hot water.

  3. Mix all together thoroughly.

Bake and serve

  1. Grease an earthenware pan and pack the mixture into it, pressing it down firmly.

  2. Cover and bake at 350°F (175°C) for one hour.

  3. Uncover and bake for an additional 30 minutes.

  4. Serve either hot or cold in slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean veal
Forms the main body of the loaf, providing the meaty structure of the dish.
Salt pork
Adds fat that keeps the loaf moist and flavourful during baking.
Eggs
Bind the mixture and help it set firmly as it bakes.
Soda crackers
Absorb liquid and add body, helping the loaf hold its shape when sliced.

The step that matters

Pack the mixture firmly into the pan. Pressing the mixture down removes air pockets and helps the loaf hold together when sliced. Loose packing can cause the loaf to crumble.
