Chicken Croquettes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. In a bowl, combine the cold mashed potatoes, butter, beaten egg yolks, salt, and pepper.

  2. Heat the mixture on the stove, stirring until warm.

Shape the croquettes

  1. Take a portion of the potato mixture and form it into an oval shape in your palm.

  2. Place a teaspoon of the chopped chicken in the center and roll the potato around it.

Cook and serve

  1. Fry in hot butter until golden brown, or bake at 400°F (200°C) for 30 minutes.

  2. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold mashed potatoes
Form the bulk of the croquette and hold its shape around the filling.
Butter
Adds richness and flavor, and helps the outside brown when fried.
Eggs
Bind the potato mixture so it holds together when shaped and cooked.
Cooked chicken
Provides the savory filling at the center of each croquette.

The step that matters

Shaping the croquettes. The potato mixture must be cold and firm enough to hold its shape. If it is too warm or soft, it will tear or leak filling while you roll it and may fall apart in the hot fat or oven.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, chicken, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Spinachfits less well

Fit is the average pairing score against butter, egg, chicken, pepper. Candidates are from the same food group and used in at least 100 recipes.
