Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Provides the bulk and soft interior that holds the croquette together.
Butter
Adds fat for richness and a smoother, more tender texture.
Egg
The yolk enriches and binds the mixture, while the white helps crumbs stick.
Bread crumbs
Form the outer coating that browns and crisps when fried.

The step that matters

Frying in hot lard. Hot fat sets and browns the crumb coating quickly, so less oil soaks in. Cool fat makes croquettes greasy and can let the coating fall off.
