What each ingredient does

Green tomatoes
Form the bulk of the pickle and give it its tart, fresh body.
Onions
Add savory flavor and soften into the pickle during long simmering.
Coarse sea salt
Draws water out of the tomatoes and onions, firming the vegetables before cooking.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp flavor.
Brown sugar
Balances the vinegar's sharpness with sweetness and helps form a thick, syrupy liquid.
Cinnamon
Adds warm, aromatic spice that rounds out the sweet and sour balance.

The step that matters

Draining after the overnight salt rest. Salt pulls water out of the vegetables, so they must be drained thoroughly before cooking. Leftover brine would dilute the vinegar and make the pickle watery and overly salty.

Swap the onion

  1. Horseradishfits better
  2. Capsicumfits better
  3. Cucumberfits better
