Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the punch its light, airy texture.
Sugar
Dissolved into syrup that sweetens the punch and stabilises the whipped egg whites.
Champagne
Adds bubbles and a lively, dry effervescence when whipped in at the end.
Jamaica rum
Provides the spirit base and its strong aroma and flavour.
Pineapple ice
Chills the punch and adds fruit flavour and dilution as it melts.

The step that matters

Gradually add the hot syrup while stirring until cold. Pouring hot syrup in slowly while beating cooks and stabilises the egg white foam; adding it all at once or while the syrup is still too hot can deflate or scramble the whites.

Swap the vanilla

How well each one fits the dish's main ingredients (pineapple, rum, sugar, egg, champagne):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Bananafits less well
  4. Mangofits less well

Fit is the average pairing score against pineapple, rum, sugar, egg, champagne. Candidates are from the same food group and used in at least 100 recipes.
