Beef Loaf

Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Chop the beef and ham very fine.

  2. Add salt, pepper, cracker crumbs, beaten eggs, and cream. Mix thoroughly.

Assemble the loaf

  1. Grease a bread pan and press half the mixture into it firmly.

  2. Trim each end of the hard boiled eggs to create a flat surface, then place them on top of the mixture in the pan, end to end.

  3. Pack the remaining meat mixture on top, pressing it down well.

Bake and serve

  1. Cover and bake in a 350°F (175°C) oven for over one hour.

  2. Uncover and bake for an additional 30 minutes.

  3. Serve hot or cold.

What each ingredient does

Ground beef
Forms the main body of the loaf and gives it a rich, meaty texture.
Raw ham
Adds savory flavor and firmness to the meat mixture as it cooks.
Eggs
Bind the meat together and help the loaf set firmly when baked.
Soda crackers
Absorb moisture and help keep the loaf tender rather than dense.
Cream
Adds moisture and softness to the mixture, keeping it from drying out.

The step that matters

Pressing the mixture firmly into the pan. Packing the layers well removes air pockets and helps the loaf hold its shape when sliced. Loose packing can leave gaps and a crumbly texture.
