Chicken Broth

Ingredients

Directions

Prepare the chicken

  1. Remove the skin and fat from the chicken, then cut it in half.

  2. Remove the lungs and any remaining insides from the chicken halves.

  3. Slice each half into thin, uniform pieces.

Make the broth

  1. Place the chicken pieces in a pan, sprinkle with salt, and add 1 quart of cold water.

  2. Heat the pan slowly until the water simmers, then maintain a simmer for 1.5 hours.

  3. Add optional spices and herbs during cooking for flavor.

  4. Remove from heat and let it sit for 30 minutes to keep warm.

  5. Strain the broth through a sieve to separate the solids from the liquid.

Serve

  1. Serve the broth over toasted stale bread, or with rice, barley, or sliced potato.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat and collagen-rich body that flavors and thickens the broth as it simmers.
Cold water
Serves as the cooking liquid that slowly extracts flavor and gelatin from the chicken.

The step that matters

Heat slowly to a simmer. Starting with cold water and heating gently lets flavor and proteins release gradually. Boiling hard makes the broth cloudy and can toughen the meat.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (chicken, allspice, celery, bread, butter, rice):

  1. Thymefits better
  2. Cinnamonfits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against chicken, allspice, celery, bread, butter, rice. Candidates are from the same food group and used in at least 100 recipes.
