What each ingredient does

Currants
Provide the main fruit flavor and the tart body of the compote.
Sugar
Sweetens the juice and, as it boils down, thickens it into a syrup.

The step that matters

Boiling the drained juice with sugar until it thickens. As water evaporates, the sugar becomes more concentrated and the juice thickens into a syrup. Stopping too early leaves it thin, while boiling too long can make it sticky and overly sweet as it reduces.
