Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and, as it browns and simmers, flavour and a tender texture.
Onion
Softens as it cooks, adding sweetness and body to the sauce base.
Coconut milk
Adds fat and creaminess, mellowing the spices and giving the sauce a rich texture.
Curry powder
Supplies the main spice aroma, which deepens when briefly cooked in the hot fat.

The step that matters

Browning the chicken. Searing the chicken until browned on all sides builds flavour through the Maillard reaction. Pale, crowded chicken stews instead of browning, leaving the sauce flat.

Swap the clove

How well each one fits the dish's main ingredients (chicken, onion, garlic, ginger, coconut, milk):

Fit is the average pairing score against chicken, onion, garlic, ginger, coconut, milk. Candidates are from the same food group and used in at least 100 recipes.
