What each ingredient does

White wheat bran
Forms the main body of the porridge and gives it its grainy, hearty texture as it cooks.
Corn meal
Thickens the gruel as its starch swells in boiling water, giving it body.

The step that matters

Stirring the corn meal into boiling water. Adding the wet corn meal gradually while stirring thoroughly keeps it from clumping into lumps. Starch granules disperse evenly and then swell as the mixture heats, so the gruel thickens smoothly.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (wheat, corn, cream):

  1. Coconutfits better
  2. Avocadofits better
  3. Vanillafits better
  4. Lemonthe original

Fit is the average pairing score against wheat, corn, cream. Candidates are from the same food group and used in at least 100 recipes.
