What each ingredient does

Chicken
Provides the main protein, which becomes tender through slow stewing.
Fat salt pork
Adds fat and savory flavor to the broth as it cooks.
Onion
Adds aromatic sweetness and body to the broth.
Curry powder
Supplies the spice flavor that defines the gravy.

The step that matters

Adding the curry powder. Curry powder mixed with cold water keeps it from clumping, so it disperses evenly. Simmering it gently for the final ten minutes lets the spices bloom without scorching or turning bitter.

Swap the onion
