Christmas Mince-Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the meat by cleaning and cutting the pheasants, partridges, and woodcock into small pieces.

  2. Chop the sweet herbs, lemon peel, and mushrooms finely.

  3. In a pan, cook the fat bacon until crispy, then add the meat and cook until browned.

  4. Mix in the chopped herbs, lemon peel, mushrooms, and spices, then stir in the egg yolks and gravy.

  5. Roll out the pastry crust and line a pie dish, then fill with the meat mixture.

  6. Cover with another layer of pastry, sealing the edges, and cut slits in the top for steam to escape.

  7. Bake in a preheated oven at 400°F (200°C) until the crust is golden brown.
