What each ingredient does

Apple pulp
Supplies the pectin that will later help the juice set into a gel.
Lemon juice
Adds acidity, which helps pectin extract well and set firmly.

The step that matters

Allow the juice to drain without pressure. Squeezing the bag forces fine solids through the cloth, making the pectin cloudy and adding particles that can weaken its setting power. Gentle drainage gives a clearer, more reliable extract.
