Why it works: Tomato and rice match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 3,065 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Kidney Bean Stew
Ingredients
Directions
Prepare the beans
Wash the beans and soak them overnight in 2 quarts of cold water.
Cook the beans slowly in the soaking water for about 2 hours, adding more water if necessary to keep them covered.
For added flavor, you can add the salt pork at the beginning of the cooking.
Finish the stew
Add the chopped onion and canned tomatoes to the beans.
Wash the rice and add it to the pot, cooking until the rice is tender, about 30 minutes.
Mix the flour with a little cold water and stir it in carefully to thicken the stew.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Kidney beans
- Form the body of the stew and provide most of its substance.
- Flour
- Thickens the cooking liquid into a smoother, heavier stew.
- Canned tomatoes
- Add acidity and liquid that flavour the beans and onion.
- Rice
- Absorbs cooking liquid and adds body as it becomes tender.
The step that matters
Stirring in the flour mixture. Flour mixed with cold water and stirred in carefully disperses without lumps; adding it dry or in clumps leaves pockets of raw starch that thicken unevenly.
Swap the kidney beans
How well each one fits the dish's main ingredients (flour, onion, tomato, rice, pork):
- Beansfits better
- Black-eyed peafits better
- Sesamefits better
- Kidney beansthe original
Fit is the average pairing score against flour, onion, tomato, rice, pork. Candidates are from the same food group and used in at least 100 recipes.
