Tamale Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mush

  1. In a pot, bring 6 cups of water to a boil.

  2. Stir in 2 cups of corn meal and 1 teaspoon of salt to make a mush. Cook for 45 minutes.

Make the meat filling

  1. In a skillet, brown the onion in 1 tablespoon of fat.

  2. Add the hamburger steak and cook until it is no longer red.

  3. Season with salt, pepper, and 2 cups of tomatoes. Optionally, add sweet pepper.

Assemble and bake

  1. Grease a baking dish and layer half of the corn meal mush in the bottom.

  2. Add the seasoned meat mixture on top, then cover with the remaining corn meal mush.

  3. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
