Ingredients

Directions

  1. Crush the plums in a kettle with a wooden pestle.

  2. Heat slowly and boil gently for about 25 minutes.

  3. Crush again, then pour through two layers of cheesecloth in a colander to drain.

  4. When cool, twist the cloth to extract all the juice.

  5. Clean the kettle and return the juice to the fire.

  6. When it boils, skim the surface and repeat this 3 or 4 times.

  7. Add ½ pint of sugar for every pint of juice and boil for 5 to 6 minutes, skimming carefully.

  8. Fill hot sterilized jars or bottles with the juice.

  9. Place the jars in boiling water and simmer for 25 minutes.

  10. Refill with boiling juice, remove from heat, and seal.

  11. Store in a dark place away from drafts.
