Oysters En Coquille

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Clean the calf brains and boil them in salted water.

  2. Scald the oysters in their own liquor until the edges curl, then cut them into small pieces.

  3. Chop the brains and mix them with the oysters.

  4. In a pan, sauté the onion in butter until soft, then add to the mixture.

  5. Add parsley, celery salt, salt, pepper, cream, bread crumbs, and enough oyster liquor to moisten.

Bake and serve

  1. Serve in shells or bread sticks, topping with buttered bread crumbs.

  2. Bake in a 350°F (175°C) oven until thoroughly hot.

What each ingredient does

Calf brains
Provides a soft, rich body that gives the filling its main texture.
Oysters
Supply the savory seafood flavor and tender pieces throughout the filling.
Butter
Adds richness and carries the flavor of the softened onion.
Cream
Adds moisture and richness so the filling stays soft when baked.
Bread crumbs
Absorb liquid and help bind the filling, and brown on top when baked.
