What each ingredient does

Butter
Enriches the onion base and carries flavour while it softens and browns lightly.
Flour
Thickens the cream and stock into a stable, spreadable sauce.
Egg yolk
Sets the thickened mixture as it heats, giving it a firmer, custard-like body.
Mushrooms
Add moisture and savoury depth to the filling.
Truffles
Contribute a strong aroma that defines the filling's flavour.
Bread crumbs
Form a crisp, golden browned crust when fried.

The step that matters

Fry in very hot fat until golden brown. Very hot fat seals the bread crumb coating quickly, so it browns and crisps before the creamy filling inside overheats or leaks out and the coating turns greasy.
