What each ingredient does

Sweetbreads
Provide the main meaty filling, becoming tender when parboiled and chopped finely.
Cream
Adds moisture and richness, and with the flour forms a smooth, thick binding sauce.
Flour
Thickens the butter and cream into a smooth base that holds the filling together.
Egg yolk
Enriches the filling and helps bind it so the croquettes hold their shape.
Eggs
Form a coating that helps the bread crumbs stick and brown during frying.
Mushrooms
Add moisture and savory flavor to the filling, bulking out the sweetbreads.

The step that matters

Allow the mixture to cool before shaping. A warm, loose filling will not hold its shape and may split or slump when dipped and fried. Cooling lets the cream and flour mixture firm up so the croquettes stay intact.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, pepper, cream, lemon, mushroom, egg):

  1. Spinachfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against butter, flour, pepper, cream, lemon, mushroom, egg. Candidates are from the same food group and used in at least 100 recipes.
