What each ingredient does

Green peppers
Form the edible shell that holds the filling during baking.
Butter
Adds richness and carries flavor while the vegetables cook in the skillet.
Flour
Thickens the brown stock so the filling holds together rather than running out.
Brown stock
Supplies moisture and savory flavor to the filling.
Ground chicken
Adds protein and body to the filling, setting firm as it cooks.
Bread crumbs
Absorb liquid and bind the filling, and brown on top when baked.

The step that matters

Cool the mixture before stuffing the peppers. A hot filling makes the raw ground meat and thickened stock loose and runny, so it is hard to pack and may leak. Cooling lets the starch and bread crumbs firm up so the filling holds its shape in the pepper.

Swap the onion

How well each one fits the dish's main ingredients (pepper, mushroom, butter, flour, chicken, ham, bread):

  1. Capsicumfits better
  2. Shallotfits better
  3. Asparagusfits about as well
  4. Onionthe original

Fit is the average pairing score against pepper, mushroom, butter, flour, chicken, ham, bread. Candidates are from the same food group and used in at least 100 recipes.
