Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and layer

  1. Chop the cold beef or veal and season it as you would for hash.

  2. In a shallow baking dish, layer the meat and hot mashed potatoes alternately until the dish is heaping full.

Top and bake

  1. Smooth the top of the potatoes and make small holes in it, then place bits of butter in the holes.

  2. Bake at 400°F (200°C) until golden brown.

What each ingredient does

Beef or veal
Provides the savoury, seasoned meat filling that gives the pie its main flavour and bulk.
Mashed potatoes
Forms the topping that bakes to a golden, browned crust over the meat layers.
Butter
Adds fat and richness to the potato top and helps it brown as it melts into the holes.

The step that matters

Making holes in the potato top before adding butter. The holes give the melting butter places to sit and soak into the potato, so the surface browns evenly instead of staying pale or greasy in patches.

Swap the potato

How well each one fits the dish's main ingredients (beef, butter):

  1. Potatothe original
  2. Onionfits about as well
  3. Chivefits less well
  4. Tomatofits less well

Fit is the average pairing score against beef, butter. Candidates are from the same food group and used in at least 100 recipes.
