Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped until stiff, they trap air and give the punch a light, foamy texture.
Sugar
Sweetens the punch and balances the sharpness of the citrus juice.
Lemons
Juice supplies acidity, and the rind oils add a fragrant citrus aroma.
Rum
Adds alcohol flavor and aroma, and keeps the frozen mixture softer.

The step that matters

Folding in the stiff egg whites. Whipped egg whites hold air bubbles that give the punch its lightness. Stirring too vigorously or too long deflates them, leaving the texture dense and flat.
