Rose Meringue Puffs

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the meringue paste as directed previously.

  2. Color part of the meringue paste with a delicate pink and flavor it with rose extract.

  3. Using a piping bag, drop large marble-sized pieces onto greased and dried baking pans.

  4. Bake slowly at 300°F (150°C) without allowing them to color.

  5. Ensure even baking to achieve a rounded, hollow, and gauzy appearance.
