Salade Jardiniere

Ingredients

Directions

  1. Slice the root vegetables and boil them in salted water until tender.

  2. Use a small vegetable cutter to stamp out star or flower shapes from the cooked vegetables.

  3. Stamp out star shapes from cooked beets and keep them in vinegar separately.

  4. Boil asparagus heads, green peas, and cut string beans into diamond shapes.

  5. Mix all vegetables (except beets and some peas or asparagus) with enough oil and vinegar to moisten.

  6. Transfer the mixture between bowls a few times to combine.

  7. Pile the mixture in the center of a serving dish and pour thin mayonnaise over it.

  8. Scatter the star-shaped beets and green peas on top.

  9. Arrange blocks of amber jelly, lettuce leaves, cress, and flowers around the edge of the dish.
