Stuffed Tomatoes

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the tomatoes

  1. Wash the tomatoes and cut a thin slice from the stem end of each.

  2. Remove the seeds and pulp, draining off most of the liquid.

  3. Sprinkle the inside of each tomato with salt and pepper.

Stuff and bake

  1. Mix the crumbs, melted butter, salt, and pepper with the tomato pulp.

  2. Refill the tomatoes with the mixture and replace the tops.

  3. Place the stuffed tomatoes in a buttered pan.

  4. Sprinkle the tops with buttered crumbs.

  5. Bake for 20 minutes at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the hollow shell and juicy filling base that holds the stuffing.
Cracker or soft bread crumbs
Absorb the tomato pulp and liquid so the stuffing holds together.
Melted butter
Adds fat and richness to the stuffing and helps the tops brown.

The step that matters

Draining the tomatoes. Removing most of the liquid keeps the stuffing from becoming soggy and watery as the tomatoes bake.

Swap the tomato

How well each one fits the dish's main ingredients (bread, butter, pepper):

  1. Capsicumfits better
  2. Tomatothe original
  3. Potatofits about as well
  4. Asparagusfits about as well

Fit is the average pairing score against bread, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
