What each ingredient does

Wheatena
Whole-grain cereal that thickens into a porridge as its starch swells in hot water.
Dates
Add natural sweetness and soft chewy pieces that soften further during long cooking.
Boiling water
Hydrates the cereal and starch so the mixture gelatinizes and thickens.

The step that matters

Adding the boiling water gradually while stirring. Adding the hot water slowly while stirring keeps the cereal dispersed, so lumps do not form when the starch hydrates and thickens.
