What each ingredient does

Cherries
Provide the fruit, flavor and bulk of the preserve.
Sugar
Sweetens the fruit and draws out its juice, helping preserve it.

The step that matters

Let it boil for 10 minutes. The mixture must reach and hold a full rolling boil so the sugar concentrates and the fruit is properly cooked and preserved. Stopping early can leave it runny and less safe for storage.
