What each ingredient does

Inside fillet of beef
Lean, tender roast that is the main body of the dish.
Vinegar
Acidity in the marinade that helps tenderise the surface of the meat.
Onion
Adds aromatic flavour to the marinade.
Bacon (in the method)
Lardoons add fat and moisture to the lean fillet as it roasts.

The step that matters

Roast over a clear fire. Lean fillet dries out and overcooks quickly under strong heat, so the fire must be even and the roast checked as it cooks. Resting after cooking lets juices redistribute through the meat.

Swap the parsley

How well each one fits the dish's main ingredients (beef, onion, pepper, vinegar, meat, sauce):

  1. Garlicfits better
  2. Tarragonfits about as well
  3. Thymefits about as well
  4. Parsleythe original

Fit is the average pairing score against beef, onion, pepper, vinegar, meat, sauce. Candidates are from the same food group and used in at least 100 recipes.
