What each ingredient does

Pheasant
Forms the main body of the dish, carrying the stuffing and being the centerpiece of the roast.
Lard
Adds fat that keeps the stuffing moist and rich during roasting.
Truffles
Contribute a strong earthy aroma that flavours the stuffing.
Bread
Forms a base under the bird that soaks up drippings and juices.
Fresh butter
Adds fat and richness to the bread base, promoting browning and flavour.

The step that matters

Roasting the stuffed bird on the bread base. Because the bird is stuffed and sits over bread in a dripping pan, heat must penetrate the stuffing fully while the bread absorbs drippings without burning. Uneven heat can leave the stuffing undercooked or the bread scorched.

Swap the orange
